Says executive chef Sudhir Pai, “Anna George Cantina, is a fusion of south Indian ingredients and style of cooking with Continental cuisine. Everything from mock tails to starters, cocktails, appetizers and main course dishes has been inspired keeping in mind the concept.
From a Curry Leaf Mozhito (Curry leaf puree, white rum, mint, lemon, ice, sugar and soda) to Kokum Sour (Mix of Kokum & orange, sweet & sour) you can find a south Indian touch. Similarly Pepper chicken pancakes i.e. Kerala iron wok tossed pepper chicken with coconut wrapped in English style pancakes served with rasam mayo to a Chettinad Chicken Pizza, the starters also have the same feel. Spaghetti with Kerala style lamb mince and Lasagne Mix vegetable Poriyal which is Lasagne interlayered with typical porial style vegetables served with curry leaf, chilli tomato sauce are some of the other dishes inspired with this concept.
If someone is looking for Malbari seafood risotto that is also there and so is Kozhi Anna Marie- a grilled chicken breast served with coconut cream volute sauté vegetables and lemon rice.
And hold your breath you got a South India ‘Kapi’ hazelnut mousse- a rich coffee and hazelnut mousse made with strong Kapi Concoction and a Payasam avocado Malibu Safari- Avacado dessert with flavours of Payasam.
