How to Steam Broccoli vegetable: Broccoli is a vegetable that tastes amazing when it is steamed. But make sure not to overcook it as it will enhance its strong flavor and drain it of all the nutrients. Just cook Broccoli for a short time just to make it tender and crisp. You can steam Broccoli using either a microwave or on stove top. If you are using a microwave to steam, then place the broccoli florets in a dish and pour 2 to 3 tablespoons of water on the top. Cover the dish and microwave it at a high temperature for 3 to 4 minutes. Check the broccoli if it is tender if not then steam it for an additional minute if needed.
If you are using a stove top to steam the broccoli, just fill a pot with a little water and place a steamer basket on top. Make sure the water does not touch the bottom of the steamer basket. Let the water heat on medium to high heat and then add the broccoli florets and stems to the steamer basket. Now cover the steaming pot with a lid and steam the broccoli florets and stems for 4 to 5 minutes until they get tender. You can enjoy steamed broccoli with olive oil and seasonings, salads, casseroles and soups.
How to Blanch Broccoli vegetable: To make the broccoli tender you can also use this method of cooking known as blanching. To blanch the broccoli you will need to fill a bowl with ice water and keep it next to the stove. Now boil a large pot of water and to it add a tablespoon of salt and broccoli florets. Let the florets Cook for 1 to 1 ½ minutes, so that they become tender and crisp. Your broccoli is now ready and can be served on the vegetable platter.
How to Sauté Broccoli: After washing the broccoli, rinse it properly to make sure it is completely dry. Now in a skillet, heat some oil on medium to high heat. Add the broccoli florets along with salt and toss them around in the skillet to coat them with oil. Now after a minute add the stems of the broccoli. Saute the broccoli till it turns bright green and tender.
How to Roast Broccoli: To roast a broccoli vegetable it should be as dry as possible or it won’t roast properly. Now heat the oven on 425F. In a mixing bowl take the broccoli florets and stem and coat them with a few tablespoons of oil and half teaspoon of salt. Now place the oil coated broccoli on a thin layer of foil lined baking sheet. Roast the broccoli for 20 to 25 minutes to make it nice and crunchy. Serve the roasted broccoli immediately. You can also use it as a side dish or pizza topping.

Mochar Chop or banana blossom cutlets are one of the best Bengali street foods, and you should definitely make it at home. It is a snack recipe made up of Mochar ( banana flower).For Kids this recipe is perfect who do not like to have usual Mochar curry If you are a non vegetarian then let me tell you that these croquettes feels like you are eating something close to a pulled-mutton kebab which has evolved from kitchen to kitchen.

Mochar Chops taste the best when they are made using the ratio of three parts of boiled and strained banana flowers to a little less than two parts of mashed boiled potatoes. This ratio will make sure you get a lot more of banana flowers in each bite, than mashed potatoes.

Making Mochar Chop at home requires a lot of patience. But all the patience, is totally worth it. Mochar chop have a unique taste which is a little sweet taste coming from the banana blossoms, amazing spicy flavor coming from homemade garam masala which is known as “bhaja moshla” in bengali, which gives mochar chop it’s Bengali touch.

Bhaja moshla recipe used for making Mochar chop : Roast 1 tbsp cumin seeds, 1 one-inch cinnamon stick, 4 green cardamoms, 6 cloves and one dried red chilli, until all these spices are nice and fragrant. Now using a grinder, grind these spices to a very fine powder and store this Bhaja Moshla in an airtight container.

3 cups Boiled, squeezed and partially mashed banana flowers
1¾ cup peeled, boiled and mashed Potatoes
1½ cup Finely chopped onions
3 tbsp Grated coconut
1½ tbsp Roasted peanuts
1½ tsp Ginger paste
½ tsp Turmeric powder
3 Finely chopped green chillies
2.5 tsp Bhaja moshla
Salt for taste
1½ tsp Sugar
¼ cup Lightly fried raisins
2½ tbsp Cornflour
2 cup Bread crumbs for coating
2 tbsp Oil for frying onions
Oil for deep-frying

Method:

As I said that you need a lot of patience to make the perfect mochar chops, so you need to do the first two time-consuming steps a day before, so that you are not overwhelmed with the amount of time it takes. On the first day start with taking out the outermost red cover of the banana flower. ONce you remove that you will see a group of florets which you will be using to make mochar chops. Now start separating all the florets. Make sure you discard all the thick red petals. The petals near the core of the blossom become interlocked, hence we will chop off the whole little cone very finely. Also chop the florets you separated earlier, but make sure to remove the hard stick and the transparent polythene-like part from each floret.

Soak these finely chopped flowers in a dish of water with salt and turmeric powder for at least three hours. Soaking the flowers helps in removing the bitter taste from the blossoms. Discard this water and transfer the banana flowers to a pressure cooker with some water and 1 tsp of salt. Cook them till three whistles on a low flame.Make sure you don’t overcook the blossoms, just cook them till they’re a little soft to chew. Now strain the blossoms out of the cooker and squeeze out the water completely from the banana blossoms. After squeezing, the water out, mash the blossoms a little with your hand or you can use a spoon for the same. Keep the mashed banana blossoms in the refrigerator.
On the next day, take the cooked flowers and mix it with the boiled and mashed potatoes. To this add the finely chopped chillies, roasted peanuts, grated coconut, ginger paste, sugar, lightly fried raisins, cornflour, sugar, salt and the homemade bhaja moshla that we saw earlier. Mix all ingredients lightly to form a dough.

In a pan heat 2 tbsp of oil and fry the onions till they turn golden-brown. Now add the dough to the onions and Cook it for around five minutes.

Let this cooked dough cool down and come to room temperature. Now knead this dough very lightly. Make sure to taste the dough to see if you need to adjust salt or sugar. The dough should taste slightly sweet.

Using your hands make flat discs from the dough and roll them in breadcrumbs to coat them.
Now in a wok heat oil for deep-frying the croquettes. Once the oil heats up reduce the flame to medium and deep-fry the chops, till golden on both sides.

Use a perforated spoon to remove the Mochar chops onto an absorbent paper. These chops go well with tomato sauce and alfalfa sprouts..

Tips :

Sometimes while frying the chops they might tend to disintegrate so always keep some extra boiled and mashed potatoes at hand while making the chops. This happens because there is still some water present in the boiled banana flowers which didn’t get squeezed out, hence always make sure to squeeze out all the water from the blossoms. If the chops disintegrate quickly add more boiled potatoes to the dough to solve the problem instantly.

Banana flowers are rich in iron hence, Always wear gloves while cleaning the banana blossoms, as they tend to blacken your nails.

India 30 October 2016: Vangi bhaji or vangyachi bhaji recipe is an easy to make dry curry dish from maharashtra made with using eggplants or vangi, spices and ground peanuts. eggplant or brinjals are popularly known as vangi or vongya in marathi. This amazing curry tastes slightly sweet and tangy as a bit of jaggery and tamarind is added in the same. In this curry you need to cook the brinjals till their soft and coat them with peanut powder and the spices which makes it a tasty side dish. You will be surprised to know that this recipe has no onion or garlic in it.

We have made the use of goda masala in this recipe instead of garam masala to give this vangyachi bhaji or brinjal bhaji recipe an authentic maharashtrian taste and flavor.

This authentic maharashtrian vangi bhaji (Brinjal) goes extremely well as a side dish with chapatis or jowar bhakris. This vangyachi bhaji can also be served as a side dish with dal-rice as well.

This vangyachi bhaji recipe is an authentic maharashtrian recipe which is lightly spiced, sweet and tangy dry curry made using Brinjals, spices and ground peanuts. 

Ingredients for Making vangyachi bhaji or vangi bhaji

Main ingredients: 



• 300 grams small or medium Brinjals (Vangi or egg plants)

• 1 tsp seedless tamarind soaked in 2 tbsp warm water 

• 2 tsp goda masala 

• 2 tbsp peanuts 

• 1 tbsp grated coconut

• 1 tbsp jaggery powder

• 1/4 tsp red chili powder

• few finely chopped coriander leaves 


for tempering: 


• 2 tbsp oil 

• 1/2 tsp mustard seeds 


•  a pinch of asafoetida (hing)

Instructions


1.Clean the brinjals in running water thoroughly and then cut them into quarters.


2.Place the chopped brinjals in salted water for 15-20 minutes to get rid of any insects and bacterias.


3.Now warm 2 tbsp of water and to this add 1 tsp of tamarind 


4.Let the tamarind soak in this water for 20-25 minutes. 


5.Squeeze this pulp from the soaked tamarind and keep it aside. 


6.Now is the time to dry roast the peanuts on a pan. 


7.Once the peanuts cool down, You need to grind them to a powder using a grinder and keep it aside. 


8.Heat oil in a pan and add the mustard seeds to it 


9.Fry them till they crackle. 


10.Next add the asafoetida and turmeric powder 


11.Now add the clean cut brinjals and the squeezed tamarind pulp. 


12.Now give everything a nice stir and then cover the pan and let it simmer on a low flame for 4-5 minutes stir sometimes in the middle. 


13.It’s time to remove the cover and add the spices, red chili powder, goda masala, jaggery and salt to the bhaji. 


14.Now give it a nice stir and then cover the pan again with the lid and let the brinjals cook till they turn soft. 


15.Give it a check once in awhile and also give a stir. 


16.if the Bhaji starts looking too dry, then sprinkle some water to it 


17.once the brinjals are nicely cooked you should add the peanut powder and saute the bhaji for 1-2 minute. 


18.It’s now time to check the taste and see if any spices are required 


19.To top it up finally add grated coconut and coriander leaves to garnish it. 


20.Give the vagyachi bhaji a final stir. 


21.serve this amazing authentic maharashtrian vangyachi bhaji hot with chapatis, phulkas or as a side dish with dal-rice

Once you are done with these steps you need to pour the mixture in a bowl and keep the bowl in the fridge. Stir it quickly every 15 minutes. After 30  minutes, remove it from there.

Mumbai, 22nd June 2015:  The IQF plant of Jain Irrigation’s fruit and vegetable processing division, was inaugurated in Jalgaon by Shri Devendra Phadnavis, Hon’ble CM of Maharashtra on 20th June, 2015 in Jalgaon in the presence of a large number of dignitaries including Shri Eknathrao Khadse, State Revenue and Agriculture Minister; Shri Girish Mahajan, State Water Resource Minister and MPs A.T. Patil and Raksha Khadse.

The IQF plant incorporates both Individual Quick Frozen (IQF) and Block Quick Frozen (BQF) technologies and has 40 TPD IQF capacity and 16 TPD BQF capacity.  The IQF plant is designed to handle around 60,000 MT of fruits like mango, banana, pomegranate, papaya, jamun, strawberry, sapota, etc. annually.

The plant has all quality standard certifications like BRC, ISO 14001, OHSAS 18001, ISO 50001, Halal and Kosher.

The products from this IQF facility would be exported to USA, Europe, Japan, Australia, New Zealand, Middle East from which the company expects to earn Rs.100 crores in foreign exchange annually.
